Contrary to what the eye sees, a smooth cake is one of the hardest cakes for us to make. Icing comes out of the mixer a whipped, airy mess. We have to take that icing, apply it to the cake and smooth out all the natural imperfections. When there is detail on the cake, these imperfections do not stand out. When all the decor is removed, the imperfections are easier to see, which means we have to take more time to diminish them.
Flavor is the primary focus of our bakery. We ice our cakes in a light, airy icing, instead of hard fondant or overly sugary buttercream. Our light icing provides the perfect balance of sweetness.
